Our oysters are harvested, graded and counted, placed into polypropylene sacks and then immediately refrigerated. Keeping oysters at around 5°C ensures the longest possible shelf life, usually around 10 days from the date of harvest. The harvest date is on the label attached the bag. The oysters remain under refrigeration until they reach their destination.
When you pick up your oysters it is advisable to bring an esky or similar container to keep the oysters chilled, especially so in the warmer climates.
